I am not a facebook fan, so I wonder: If I kick-off my boss, will he receive a notification: "XXX does not want to be your friend any more" ?? Will all my other friends know that I have kicked him off? Nice!!

Your boss won't know unless he looks for you in his friends list. People don't receive a message when they've been unfriended. Something else you might try is separating your work life from your private life. Get all your work relationships hooked up through something like LinkedIn then send a message to your Facebook work connections and tell them that you've decided to move all your work connections to LinkedIn because it's more professional, etc then unfriend all the work people. I did this last year and I never have to worry about saying the wrong thing and having it become a problem at work.
